Is the dual gang pot a necessity or will this work with a regular b100k?

The dual gang pot is needed to get the resonance control working properly i'm afraid.

Im gonna have a go at this next week. Just womdering what the trimmers do and if its worth bringing them off board?

Sounds really nice. Definately close enough to pass as a a phaser, if not slightly like a modulated wah.
The 2k trimmer seems to set the resonance but cant go too high or low without either squealing or loosing the effect entirely.
The 10k trimmer does seem to subtly affect the sound but im not exactly sure how, im going to try something bigger and see if it makes a more notable difference.
I used 1M LDRs with green diffused 5mm LEDs. I havnt tested any others but i think im going to stick with these as they work great.
Im thinking about adding an LDR driven by a clipping diode, and a switch, to the 'resonance fixed' pot to act as an auto-wah. Or maybe a blend circuit to leave in some dry signal.

*!Quick safety update!*
DO NOT swap out the 10k trimmer. I just had my first pedal fire!
The trimmer sets the max resonance for the fixed modulation pot. Setting it too high caused my led to pop and the potentiometer instantly got red hot, (actually glowed orange type hot!) and started to smoke, and left a scorch mark bench!
Luckily the circuit survived but i had to replace the LED, the fixed res pot and the 2n5088.
So just a reminder to be careful. Even these low voltages can be dangerous!
